Welcome to Portland

Welcome to Portland!

I find myself in Portland for this week due to a work conference, and I have to say this is a beautiful city! I'm hoping to find more time to venture out and visit some of the local spots. I wonder if I can find a job in Professional Traveling! How amazing would that be like Anthony Bourdain on the Travel Channel! Where can I apply??

Portland is a very eccentric city, but I love it. It's not what I'm used to coming from a small town in Kentucky, where something out of the "norm" is not normally embraced. I love the arts/free spirits/and being able to express yourself. You see people walking everywhere. Bicyclist ride down the street. Downtown people are eating in parks for the lunch breaks. Mother nature and the outdoors is very much appreciated in this part of the country! It's a breath of fresh air.

This is the "Light Rail" that I have to ride to work everyday this week. It's free and takes you around the city. How cool! Reminds me of a subway almost. Very convenient and user friendly!

Portland Bound

In less than 24 hours I'll be on an airplane flying to Portland, Oregon! Anyone ever been? Any hot spots that I need to check out, restaurants, etc? If so, please let me know! Although a work related trip, I'm looking forward to visiting some place I've never been before! Traveling~ I love it; but I hate all the preperation that comes along with it! Packing; oh dear! I'm one that believes my entire closet needs to go with me, ha! The airlines for some reason like to disagree and with all those extra baggage charges I'm definitely keeping it to a light minimum!

I'm definitely going to miss my critters, they are the best company! And my boyfriend J, I wish he could come along with me!

Last night J and I went to dinner together. I love alone time with each other, just enjoying each others company. I had an amazingly delicious dinner; Terrayki Sesame Chicken with a pineapple glaze, peppers & red onions served over a bed of rice pilaf. I even took a picture, imagine that!

Of course we can't forget my delicious drink! A mango mai tai, sounds like something I need to be sipping on the beach with the waves crashing in....oh the dreams!

Valentine's Day 2010

I was very excited to spend Valentine's Day with J. It was our First Valentine's Day as a couple, and there isn't anyone else that I would want by my side. He makes my heart smile :).

On Saturday night I found myself baking him cookies with frosting and sprinkles! You can never have enough sprinkles, right? Hearts, Cupid Arrows, and Lips (that ended up being a blob). Ha! Pucker up darlin!

Valentine's Day we ended up being lazy and snuggling up to each other! It was dreary and spitting snow so we ventured out to rent a couple movies! We watched:

Very cute movie! Quirky and charming, and your usual Chick Flick but still very enjoyable!

J's pick. These movies crack me up, and I find myself laughing so hard throughout the entire thing! We all need a good laugh every now and then, right? Or heck, All the time rather!

I cooked us dinner, something hearty and filling since it was so bitterly cold outside! Chicken Pot Pie; J's favorite! Maybe it's not the most romantic meal to all, but it is to me since it's his favorite! And I love it too! Quick and easy!

Of course I have to leave you with a picture of my Valentine's Day goodies from J. Isn't he just the best!?


A bear. Chocolates. Card. And in the little v-day card a $30 dollar gift card to Hobby Lobby!!! He's so thoughtful! Especially since he knows that I'm teaching myself to make jewelry that will definitely come in handy when buying supplies!

National Farm Machinery Show

What a wonderful weekend!

Friday, boyfriend and I headed to the National Farm Machinery Show and Championship Tractor Pull. A country girl at heart that I am, this was exciting to me! It's a big deal around these parts, and all that are involved in agriculture at any sorts has been to this event, except I. Now I can proudly say that I have attended! I've included some pictures for your viewing. The venue was over a MILLION square feet, yes you read that right! Can I just say my legs felt as they were jello, by the time we were finished walking! Burn baby burn! I have never in my life seen so many various types of tractors, farming equipment, and various odds and ends! Definitely an experience, and I can't wait to go back next year!

Food Blog

I'm such a foodie! I love trying new recipes or putting my twist on something original. I love when in a new city, checking out new eateries to divulge myself into. With that being said, I've never attempted a "Food Blog" but it seems that its the latest "thing" so I thought to myself, why not give it a whirl? So here I am...

Tonight I made some chicken stir fry. Absolutely delicious, I could live off this stuff each and every single day. Here's my attempt at "Food Pictures" as well, I definitely need some practice on that aspect!

Pan searing the chicken...rubbed in "No Salt Seasoning and Pepper" on both sides before throwing into pan with some Extra Virgin Olive Oil....

Time to dice these bad boys up! Yummm..

Sauteeing in some Olive Oil ( I love this stuff). It's definitely the greatest thing since Sliced Bread...or well maybe somewhere close. :)

Okay. Busted. I cheated! These are great! I get them at Kroger and it already has all the stir fry veggies in it with the noodles included. You just throw them in some oil and sautee them till done :). I like to add more veggies than what's included in the bag though!

Finished Product! I added 1/4 cup of soy sauce mixed with a couple dashes of sugar to take the Bitter Taste of Soy sauce away. Absolutely excellent!

For those that are doing Weight Watchers Like I....

This whole meal was 5 points :).

One chicken breast- 4 points
1 1/4 cup of Stir Fry - 1 point.
Soy Sauce - 0

Awesome! Now that's what I'm talking about!

Laughter is Timeless

This weekend was one that are sometimes desperately needed; one of relaxation, and no set plans just going by what our hearts may desire. Friday night "Boyfriend" & I found ourselves shooting some hoops, and testing my very rusty basketball skills! What fun it was! My muscles were definitely feeling it afterward, but the burn was great! An accomplishment of sorts. Our lungs were burning, muscles sore, and sweat dripping off of us but we had such a great time! He pushed me outside my limits, I pushed him.

Saturday I found myself in his "shop". Do all men have these? Shops with toys, power tools, radio blaring, and all kinds of other gadgets that I really need to learn the purpose of! I am, slowly. I spent 8 hours in there until the wee hours of the morning, and I have never had so much fun! Chowing down on some Subway spread out on his work bench; almost as a little picnic. Watching him work away, sharing giggles and laughter, little sayings of love, and glances that only us two understood. Dancing like no one was watching, making a total fool of ourselves but loving every moment of it. Isn't that what love is all about, being able to act goofy and out of your norm together, enjoying the silliest of moments.

I absolutely love Laughter. It makes my heart smile.

He took my hand and we went up the gravel drive, well actually we drove! It was bitterly cold! He said have you ever laid down in the middle of the road? No, I replied as I watched him lay down on the pavement, looking up at the black night sky. I laid down beside him, staring up not seeing a star in the sky, as the clouds overtook. It was a priceless moment, the air was so still and quiet, a sense of peacefulness surrounded. And I was beside the one that I love. It reminded me of that moment in the movie "The Notebook", when Noah and Allie lie down in the middle of the road, until a truck comes quickly out of no where. Thank goodness, that scenario didn't happen to us. We were able to just enjoy the peacefulness of the moment.

Snow Day

We were hit with a lovely snow storm a couple weekends ago, although nothing like what the east coast has at the moment. About 6 inches blanketed my sights, everywhere I turned and it was quickly determined to make the most out of it! Below are some pictures of the fun that was had:

That's my boyfriend attempting his skills at "snow boarding", and I have to admit he's pretty darn good! Myself, I would have been flat on my butt in NO seconds flat!

This is me after sledding down the hill! The look on my face, says it all! SOOO much fun!!

Now all that was needed was some Hot Cocoa with Extra Marshmallows. Yes Please!
