I Know I Look Ridiculous But...

Okay! I know that I look absolutely frightening in this picture, but please just hear me out on this! I have VERY dry skin and have been on the search for some natural ways to help with this issue, and this is what I found.

 A Raw Honey Face Mask!

 Honey is full of amazing enzymes and is a natural antibiotic, did you know that? So why not use something that is completely natural on one of the most sensitive parts of your body, your face? Here's the "recipe"

2 tbsp RAW Honey
1 tsp cinnamon
1 tsp nutmeg
 *Cinnamon & Nutmeg act as an exfoliator*

 Mix ingredients in a bowl. Smooth "paste" on your face and leave for 30 minutes. Wash off with lukewarm water. (They said to follow up with Extra Virgin Coconut Oil to use as a moisturizer but I didn't have this, so left it out).


My face feels AMAZING!

 The website says to do this every day for 2 weeks, and then you can reduce it from there.

Good Things Tuesday

I'm still recovering from Thanksgiving, how about you? I also graced the doors of the gym last night, first time in a week and man I'm so sore this morning! Ouch! My arms feel like jello, I don't even want to lift them up! And my legs, well let's not even talk about them. I think that staying in my chair all day at my desk is sounding like a great idea!

This morning while driving to work the skies were cloudy (mostly dark) but yet there was a break of sunshine attempting to peer through! And then straight ahead there was a beautiful rainbow! Wow, what an amazing way to start the day! It wasn't a full rainbow, you could only see the ends as they began to arch up, and the arch disappeared in the clouds to only reappear again. Getting a picture was not going to happen, as I was going 70mph on the interstate, but it was still beautiful though! It definitely put a smile on my face!

My boyfriend (Jon) just called me at work just to tell me "He loves me & to have a great day."

I love this day!

What good things have happened to you today? Life really is about enjoying the simple things!

*Recipe* Pumpkin Pie Mousse

I've been put in charge of bringing a dessert & a vegetable to Thanksgiving dinner tomorrow. Fortunately/unfortunately the dessert is now complete and chilling in my refrigerator! Yes, one dish down and one more to go! The unfortunate part of this is that now I need to kick in major self-control to not just eat it straight out of the bowl!

This dessert is delicious, not to mention pretty much guilt free! Go make it now!

1 package sugar-free vanilla instant pudding
1 package sugar-free butterscotch instant pudding
2 cups skim milk
1/2 teaspoon pumpkin pie spice
1 15-ounce can pumpkin puree (not pumpkin pie filling)
1 8-ounce container fat-free whipped topping
Whisk pudding mixes and milk in a large bowl for 2 minutes. Mixture will be very thick. Stir in pumpkin puree and pumpkin pie spice, then fold in whipped topping. Refrigerate for 30 minutes and serve!

Good Morning, ya'll! The holiday weekend is almost upon us, can you believe it!?

I cleaned out my photos on my phone this morning and thought I would share them with you! It's what I like to call a "Photo Dump."

Starbucks this morning! Did you know they now have Skinny Peppermint Mocha! Yessss! Oh, and I received a coupon for a free drink on my next visit! Great morning so far!

Mad Hopper

Last night as I was about to go get in the shower, Jon decided to have a “Hopping” contest with me. I’m not sure that it meant to start out as one, but it sure ended as one. With me surpassing him, him blocking my forward motion, which resulted in me grabbing and hanging onto his waist for dear life and trying to not plummet to the ground. He gets in the way of my momentum I tell him!

Hopping you say? Yes, that’s what you do when you only have one leg and your artificial one is propped up against the bedroom wall, you hop! I’ve become quite the “Mad Hopper”, as Jon likes to call me!

After the initial thought of what we just did came into play, I leaned up against the wall uncontrollably laughing, so hard I couldn’t get my breath! Jon was laughing, and I was still gasping for breath from the deep belly laughs! He says, " this has to be quite possibly the most retarded thing we have ever done." Ha!

He says, “You know when we have kids they are going to go to Kindergarten and show their teacher how to hop.” The teacher will look at them puzzled asking them where they learned to do that. As they hop around in circles singing their ABC’s, saying my mommy does it all the time!

I said, well at least they will do great in a sack race!
Jon: No, they won’t! They will have someone holding them up and slowing them down!

Oh, the craziness of my life and how I love every second of it!

~Recipe~ Apple Fritters

What does a rainy cloudy day call for? Homemade Apple Fritters!

I found this recipe on my arch nemesis Pinterest a couple months ago, and decided that tonight was a perfect opportunity to try it out! Also, with 13 quarts of apples in my freezer I need to start finding creative ways to use them up!

Homemade Apple Fritters Recipe

heaping cup AP flour
1/3 cup sugar
2 tsp. baking soda
dash salt
1 – 2 tsp. cinnamon (depending on how much you love cinnamon)
1/4 tsp. nutmeg
1/2 tsp. vanilla
1 T. butter, melted
1 egg
1/3 cup milk
1 – 1 1/2 cups chopped apple, your favorite kind for eating, peanut sized or smaller
oil for frying
milk and powdered sugar glaze for dipping or just powdered sugar for dusting
(About 1 cup pwd. sugar + 1 T. milk or more) 

Mix all dry ingredients together, slowly add the wet ingredients minus the apple. Carefully mix until well combined but not overly beat,gently fold in apple pieces. The batter should be the consistency of a light cake mix. Once the oil is ready (when a test drop of dough floats to the top of the oil, a drop of water sizzles, or a piece of white bread browns in 60 seconds) then using a cookie scooper or soup spoon, place a 4-5 balls of dough into the oil. Be careful not to overcrowd and watch carefully for the underside to turn golden brown, then gently flip over and continue frying until done. Adjust cooking times based on size of fritters and temperature of your oil, ideally around 365° F. It is always a good idea to test one to ensure it comes out like you are expecting.

These were SO delicious! They tasted like food you would get at the Fair!

*Recipe* Creamy Chicken Rice Soup

Where has this weekend gone? I can't believe it's already Sunday! Thankfully I only have a 3 day work week coming up, I love holidays! :).

Today was cloudy, rainy, and just plain nasty outside! A perfect day to stay inside, which I did ALL day! I did cook up this soup I had found on Pinterest (My obsession) and it looked like a perfect meal for a rainy Sunday.


4 cups chicken broth
2 cups water
2 boneless, skinless chicken breasts
1 package of Rice-a-Roni long grain and wild rice ( I didn't have Wild Rice, so I just used Chicken Rice A Roni)
1/2 tsp salt (plus more to taste)
1/2 tsp pepper
3/4 cup all purpose flour
1/2 cup butter
2 cups half and half (I used 2 cups of Fat Free Evaporated Milk)
1 cup grated carrots ( I used 2 cups of Frozen Mixed Vegetables in place of the Carrots & Celery)
1 cup diced celery


Combine broth, water, carrots, celery, chicken and rice (along with seasoning packet) in a large slow cooker. Cook on low for 6-8 hours or on high for 4 hours. Take out chicken and shred with two forks and then add back into slow cooker. In a small bowl combine salt, pepper, and flour. In medium saucepan over medium heat, melt butter. Stir in flour mixture by tablespoon to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Stir cream mixture into slow cooker and then let cook on low for 15 more minutes. 

I served this with Garlic Parmesan French Bread Baguettes, so delicious! What is your favorite rainy day meal?

Perfect Day

Today was one of those days that I wish I had more of. Jon got up early to go Deer Hunting as I chose to sleep in, while being snuggled under the covers. I woke up around 9:00 am, went and got breakfast and spent the rest of the day relaxing. Jon came home and took a nap on the couch with his feet propped in my lap as I read most of the afternoon. After awaking we went to the grocery store, rented a couple movies and spent the rest of the afternoon/evening snuggled up on the couch. Top it off with homemade chili for dinner, and I have to say it has been a Perfect day! Lots of giggles, laughter, & of course kisses!

I wish there were more days like these! Relaxing and not rushed to be anywhere but where we are that exact moment!

I had this handmade baby doll that I received when I was 6 weeks old, her name is Lindsey. She has a pink crocheted blanket that is attached to her, half of her hand is chewed off from one of my dogs but I still have her. She was my “security blanket” for a lot of years.

boyfriend (Jon) - his goofy imitations! It cracks me up and makes me smile when I’m having the worst day!

3. You're at a ball park. You have $5 in your pocket. You order...
Nachos w/ cheese and a Diet Coke! Ha, i think it evens out with the “Diet” thrown in there!

4. If you could have any celebrities 'voice' as the voice on your GPS, who would it be?
The Guy (Jake) off of Sweet Home Alabama, his voice just makes me swoon! I’m a sucker for Deep Southern voices.

5. Are you a messy sleeper or a neat sleeper?
Oh, I am a total messy sleeper! Pillows & Blankets end up on the floor. Somehow, the Fitted Sheet gets un-tucked and is hanging off the bed, I’m not sure what I do in the middle of the night! ha!

Fill In The Blank Friday!

1.   My favorite new blog of the moment is   Todays Letters. I’ve loved them for a long time!

2.   Something I am thankful for is  my life!

3.  Something that made me laugh this week was  my crazy silly boyfriend! It all started with some Ruffle Potato chips and dip....

4. An item that is currently on my wish list is a new direction in life! That’s all I can say at the moment :).

5.  I am excited about  this weekend spent with Jon in the woods, being complete naturalist. It’s hunting (Deer) season baby!

What a beautiful way to start off a Friday morning! This list really made me stop and think what a wonderful world we do live in! Wow!

Thankful Day #10

Today I am thankful for my willingness to try new things and be adventurous!

 It makes life intriguing! My boyfriend is the avid hunter and outdoors man and I think it's wonderful! I believe more individuals in this world need to be able to fend for themselves if an emergency was to arise. With that being said, we eat lots of Wild Game meat, Venison being my absolute favorite! Tonight, I tried Rabbit for the first time. So delicious!

I love the rustic look. Anything old, distressed, and vintage immediately captures my heart. I love warm colors, but also love to throw in pops of color here and there. My home is filled with photos of places we've been, of US, family & friends, and anything that makes us smile!

Thankful Days # 7 - 9

Thankful Day #7 - 

I am thankful for the beautiful weather! Sunshine and temperatures in the mid 60's for November, definitely will take that any day! That's just one less day of snow, right?

Thankful Day #8 - 

I'm thankful for my friends! I don't have a big group of friends, it's actually quite small. However, the close friends that I do have are amazing and wonderful, and without them sometimes I'm not sure how I would make it! I love the moments we share together, especially the moments that no one else would "get" except us :).

Thankful Day #9 - 

Today I'm thankful for a job that helps me live each day with no financial worries. Sure, I don't live a lavish lifestyle but I'm thankful for being able to afford the basic necessities in life to survive. It's not a job that I love, but I have to be happy that I have one when so many people in this country are desperately searching for work.

I wish my desk looked like this! So charming :)

Thankful Day #6

This morning has consisted of Homemade Biscuits & Gravy for breakfast, a cup of coffee, and Jon upstairs in his man cave piddling around. The sun is shining brightly as I type this post, and we are going to head out and enjoy the weather while it still lasts!

Today, November 6, 2011 I am thankful for:

My Oncology Nurses. They were amazing while I was a pediatric cancer patient and without them I may not be here today. They were understanding, caring, a friend, and a part of my family for 2 years. They will never be forgotten.

My pets. I am a huge animal lover, and my two cats I love dearly. They make the worst days seem okay, and they truly are considered to be a part of the family :).

Thankful Day #3

First week back from vacation and already sick, how does that work? I think my body is wondering why I've put it into overdrive this week! Nonetheless, I came home early from work today to lay on the couch and watch countless hours of HGTV along with a lovely nap. It's a rainy Thursday evening here in Kentucky, so a perfect night to stay in!

Today, November 3, 2011 I am thankful for: 

My amazing boyfriend Jon, of 2 1/2 years! When we first met I wasn't even looking for a relationship and he swept me off my feet! We've had our rough times, but also some wonderful ones too! He has made me appreciate the smaller things in life, to slow down and live EACH day and stay in the present, and to most importantly just be Ashley! He loves me for all that I am, pushes me out of my comfort zone, and believes in me more than I do myself sometimes. He's goofy, crazy, spontaneous, and an amazing man! I'm so thankful to have him in my life, more than I probably tell him at times.

This is Jon & I eating dinner on Sunset  Beach in Florida last week on our First Vacation together! Great memories!

Having no cavities at the dentist today for my 6 month cleaning! Yippeee!!!
