Travel Tuesday: Nasa Houston Edition

Facebook memories & a chat with a friend last week inspired this post. She said, that I needed to write a blog about our adventures. She's right. It's something I've talked about doing for the past year but never took the time, so now is better than never, right? 

The husband & I have been extremely blessed to travel the past couple years. We literally got paid to travel the United States. No, seriously! We did! We hauled cattle & lived in a semi (18 wheeler) full time for a year and a half. There were times that it was difficult, times that it was seriously a blast & times that you just wanted to crawl in a hole and click your heels in hopes it would return you back home. Being out on the road is so much fun, but it's not always a bouquet of roses. I've decided to share our travel stories throughout this blog, for my record and to read back on & well... for you all to hopefully enjoy!

A year ago:

We had just delivered a load to Spring, TX the night before, one that we were so thankful to be done with. We were already under a time crunch & well the GPS definitely wasn't playing in our favor. It was nearly 5 am when the GPS decided to send us a "short cut." & I guess that a short cut is fine if you're not in a semi. This short cut was right smack dab into an unsafe part of the neighborhood. There were individuals sitting out on their porches "smoking", climbing up on the side of our steps asking for money & attempting to look into our truck. It's one of those hit the locks, hold onto the "oh shit handle" - really not sure what I thought that was going to do for me & pray that we can get the hell out of there. The poor hubby was having to attempt to back us out of there because there was no going down to the next street and turning around. Luckily we managed to get out safe & sound, and lived to tell another adventure. 

With that being said, we were definitely over due for a mini vacation or day off after that ordeal. We always love looking for things to do around the area if we have a bit of down time, especially if it's somewhere that we've not been. 

Well, we found NASA! The Houston Space Center to be exact! We dropped our cattle trailer and rolled right up in there, in the semi! I mean they had bus & RV parking, so we were allowed too, right?

I was in complete awe of this place. I've always been fascinated with space in general so I was like a kid in a candy store. There was SO much information to digest & pieces of NASA history to look at. It was incredible. I definitely would love to visit again as I'm sure that I wasn't able to see it all. I'll let the rest of the pictures do the "talking."

Weekend Recap

Happy Monday!

I had every good intention to write this post this morning & well clearly that didn't happen. So, here we are at 10 pm on a Monday night!

Friday: We didn't do much. It was cold & spitting snow flurries so we stayed in & watched endless episodes of Big Bang Theory (tell me we're not the only one's who's hooked on this show.)

Saturday: We did a little shopping for an upcoming birthday coming up in our family & treated ourselves to a lunch date. We ate at Qdoba Mexican Eats. It was my first time there & now I'm wondering why I've waited so long! I ordered a Tequila Lime Grilled Chicken Taco Salad & it was delish! I loved that you could go along and pick your toppings as you went, as well.

I also loved that they gave us a Military Discount. When we asked if they offered them the cashier asked the manager on duty and she said, no. However, she said that she always offered a free drink, as that was the least that she could do. So, thankful for that!

After shopping & our little lunch date, we decided that we'd do a little grocery shopping. The grocery store was insane & I couldn't figure out why, until I realized they were calling for an inch of snow the next day. Yikes! Thankfully I had a list so we were able to get in and out pretty quickly! After that we came home, had a quick dinner & watched a movie (The Bourne Legacy) which was my hubbies pick. Not my choice, but he wanted to get caught up for the final movie, Jason Bourne.

Sunday: I had a migraine all day so I stayed in bed all day. The hubby was so awesome & cooked dinner. He grilled pork tenderloins that he had marinated all day in Jack Daniels Marinade, carrots, mac & cheese & a handmade salad topped with veggies. It was so delicious. Oh, and did I mention that he did the grilling outside in the middle of snow showers, ha! Crazy man! Goodness, I do love him though.

Oh Hey, Friday

My week was pretty uneventful this week. I have gotten off track with our gym time this week and eating healthy, and I can definitely tell. 

We did make it to yet, another weekend though! Here are a few things that I am loving this week...

1. I joined in with Mattie & Olya for their Galentine's Blogger Exchange. I joined their Blogger Christmas Cheer Exchange as seen here, and it was so much fun! So, definitely excited to do this once again! 

2. I've learned that if you want to get your daily steps in, to just walk through the VA Hospital. Ha! Everything seems to be SO spread out! However, I am sure that's any hospital. The husband & I are worn out by the time we get finished walking to and from his doctor appointments. 

3. I'm totally want this book. Has anyone read it? I stumbled upon this word a couple weeks ago, and ever since then I have been OBSESSED! I just love the concept of living in the moment and making every day moments truly beautiful.

4.  I saw this on Facebook earlier this week after having one of those days. It just seemed so fitting & I'm sure that we all can relate to it at some point or another.

5. We woke up this morning and we were having snow flurries. So, I put on a big crock pot of potato soup  and it was so comforting to come home and have a big bowl  & the house smelled amazing!

*Lunch dates with my hubby at one of our new found favorite spots! 

* Facebook memories that remind me a year ago I was in Texas. An unexpected mini adventure with the hubby while we were stuck down in Houston.

* For the VA finally calling to schedule my hubby's PT. It's ONLY been 3 weeks since surgery...... 

* For nightly workout sessions. They are seriously good for the soul!

When it came to the color white I immediately thought of a recipe I wanted to share with you all. January has been a month to get my eating back on track & well, I wanted to share a healthy recipe with you that quickly has become one of my favorites! 

One evening I was striking out on what to fix for dinner. I was craving tacos, something terrible, but didn't want to completely ruin my healthy eating & well, this recipe was born.

Cauliflower Rice Taco "Bowls"

Cauliflower Rice
Ground Beef
Taco Seasoning
Black Beans
Sour Cream

Cook cauliflower rice as directed. I buy the Green Giant Steamer bags of cauliflower rice. It makes dinner time so easy and quick! 
Brown beef in skillet and stir in taco seasoning as directed. (I also added black beans & corn as well. But this is optional.)

Scoop cauliflower rice on plate. Top with ground beef, salsa, sour cream and any other toppings you may like.

Thankful Thursday

This week I am thankful for: 

* My hubby making breakfast for me this morning. 

That my Godfather and husband get along so well. My Godfather came and picked him up two days out of surgery to take him to dinner. For them to have a little guy time. 

* For unseasonably warm weather here in Kentucky. 

* Gym time in the evenings with the husband. We've started to get into a "groove" and I love that time together. He's my biggest motivator. And even though I may think i'm dying at the time, I love that he pushes me outside of what I think my "limits" are.

Currently: January 2017


Gathering: Clothes. I am striving this year to live more of a minimalist life and so this month I have been gathering clothes that the hubby & I no longer wear. So far, we've gotten rid of about 6 garbage bags of things! How is that even possible? It's amazing how "free" I feel after just getting rid of so much stuff! 

Making: Lots of healthy dinners this month! We have gotten back on the bandwagon of eating healthier and i can tell a huge difference on  how we are feeling. P.S. Cauliflower Rice has become my new obsession! 

Sipping: Lots & lots of water! Oh, and I've gotten on a tea kick. Tazo Organic Chai-Vanilla tea especially. 

Following:  a becoming minimalist page on Facebook. 

Resolving: to live a more organized life and strive to just be a better person.
